Each production site has its own mother dough – a levain – that comes from the mother dough from that first bakery. It’s refreshed each day in the factories throughout Europe and added to that day’s dough and its unique combination of bacteria and acidity helps enhance the flavours of the butter or vanilla and gives the products their unique texture. It’s also a major factor in how Brioche Pasquier can ensure its products have a shelf life of 29 days without the use of preservatives.
