This month, as the Walled Garden at Delapré Abbey reaches its peak, Hibiscus offers a dining experience that’s firmly rooted in the season. Set within the Abbey’s historic Billiard Room, the restaurant continues to build its reputation as one of Northampton’s most exciting destinations for modern fine dining.
Led by Executive Head Chef Bart Polinski – named Chef of the Year at the 2022/23 Weetabix Northamptonshire Food & Drink Awards – Hibiscus has gone from strength to strength, securing its second AA Rosette and being named Restaurant of the Year at the last year’s Weetabix Northamptonshire Food and Drink Awards. But for Bart and the team, the focus remains on delivering a thoughtful, ingredient-led experience that speaks of place, season and care.
Much of what appears on the plate is grown just metres away in the Abbey’s Walled Garden, tended by Bart himself.
“This time of year is brilliant in the garden,” he said. “We’re using everything we can – herbs, tomatoes, edible flowers. The menus change seasonally with what’s ready, so the produce really leads the way.”

Guests can expect a seven-course tasting menu where each dish is carefully constructed – from a silky pea cappuccino with black truffle, to blueberry and juniper trout gravlax with pickled vegetables and wasabi cream. Pork belly with rhubarb chutney and smoked mash brings comfort and depth, while halibut mosaic with red pepper, goat’s cheese and spinach adds a refined seasonal touch. Desserts include a honeybee doughnut made with Walled Garden honey, and a strawberry course that celebrates the best of the British summer.
Alongside the food, the restaurant team curates a considered wine list that complements each dish. With the option of a wine pairing flight, guests can explore a selection of bottles chosen to bring out the best in each course – all presented with the relaxed expertise and genuine enthusiasm.
On sunnier days, guests are encouraged to begin or round off their experience with a drink in the Walled Garden. Whether it’s a chilled glass of English rosé or something a little stronger, it’s a lovely way to soak up the surroundings before heading inside.
